Wild Scampi Langoustines
Wild Scampi Langoustines
Whole wild scampi, flash frozen on the boat to keep the sweetness that makes them worth the price. Long orange-red claws and firm tail meat that needs very little done to it.
What you get
- Wild caught and flash frozen whole, with the shell left on
- Plump, tight textured meat with a delicate sweet finish
- Distinctive orange banded shells that plate beautifully
- No unnecessary additives
How to cook them
Thaw slowly in the refrigerator and serve on crushed ice with soy, wasabi and pickled ginger for the classic raw treatment. To grill, split the shell along the back, fill with herb butter and cook over medium heat until the meat turns opaque. They also bake well under a cheese crust. Overcooking makes them tough, so pull them as soon as the flesh sets.
Storage
Keep frozen at -18C, thaw in the refrigerator, and never refreeze after thawing. Reseal the pack tightly once opened.
